Pinto Beans with Sage
2 cup Pinto beans
1/2 lb Bacon or salt pork
1 Large onion, chopped
1 Clove garlic, minced
1 tsp Salt
1/4 tsp Fresh ground pepper
1/2 tsp Dry mustard
1 ½ tsp Sage
2 tsp Brown sugar
Water Wash and pick over the beans. Cover with six cups water and soak overnight. Or boil two minutes; remove from the heat, cove and let stand one to two hours.
Cook the bacon or salt pork until brown. Add pork to beans. Pour off all but four teaspoons fat from the skillet, add the onion and brown lightly. Add to beans. Add garlic.
