Swiss Chard Rolls
1 cup Dry brown rice
4 tbsp Oil
2 Celery stalks, chopped
12 Large mushrooms, sliced
1 cup Chopped onion
12 Swiss chard leaves, separated from stalks
2 cups Chard stalks, thinly sliced
4 cups Spicy tomato sauce
1 cup Grated cheddar cheese
Cook rice and set aside until cool. Heat oil and sauté celery, mushrooms, chard stalks and onions. Mix with rice.
Fill the leaves with vegetable mixture and roll up, folding in ends. Place in 9 x 13" baking dish and pour tomato sauce over. Sprinkle with grated cheese and bake covered, at 350 deg F for 15-20 mins.
Serves 4 as a main dish
