Lemon Zucchini
1 lb Small zucchini
1 1/2 tbsp Olive oil
1 Lemon
Sea salt
Black Pepper
Trim zucchini and slice diagonally. In a large skillet, heat oil. Add zucchini slices and cook, stirring frequently until they are tender. Meanwhile, grate the lemon zest. When the zucchini are cooked, sprinkle the zest over them. Season well with sea salt and black pepper and serve.
