Lemon Roasted New Potatoes
1 lb. Med. New Potatoes
2 tsp Lemon zest
1/4 cup Olive oil
1/2 tsp Salt
2 tbsp Fresh squeezed lemon juice
1/4 tsp Pepper
1 tbsp Fresh oregano, minced
6 Small bay leaves
Preheat oven to 375 deg F. Quarter potatoes and place in a baking dish in a single layer. In a small bowl, blend remaining ingredients, except bay leaves. Pour over potatoes. Distribute whole bay leaves evenly among potatoes. Roast 45 min. or until tender, turning occasionally with a spatula. Discard bay leaves and serve hot.
