Garlicky Baked Squash
1 Spaghetti squash
2 Garlic cloves, crushed
1/2 cup Butter
1 Shallot, chopped
3 tbsp Chopped fresh mixed herbs
1 tsp Lemon juice
Parsley, chives, oregano
4 tbsp Shredded Parmesan cheese
Salt and pepper
Preheat the oven to 350 deg F. Wash the squash and then cut in half lengthwise. Place the two halves, cut-side down, in a roasting pan. Pout a little water around them, and then bake in the oven for about 40 min., or until tender.
Meanwhile, put the butter, herbs, garlic, shallot, and lemon juice in a blender or food processor and process until thoroughly blended and creamy in consistency. Season to taste with salt and pepper.
When the squash is tender, scrape out any seeds and cut a thin slice from the base of each half, so that they will sit level. Place the squash halves on warmed serving plates.
Using a fork, pull out a few of the spaghetti-like strands in the center of each squash half. Add a generous dollop of herb butter, then sprinkle with a little of the shredded Parmesan cheese. Place the remaining herb butter and Parmesan cheese in small serving bowls, and add them to the squash as you pull out more strands. Serve.
